In case you don’t believe me, here’s the results of Step 1 today:
Now it’s soaking in salt water for 8 hours.
7 pm: I couldn’t wait any longer, so I’m moving on to Step 2, boiling the rind.
7:45 pm: Drain, and then prepare the pickling solution, boil 5 minutes
8:00, and it’s time to add the boiled rind back in, simmer for an hour!
9:00 Now that it has turned translucent, put it in the jars, fill to within 1/2 inch with liquid, and assemble the lids. Boil in the big pot for 20 minutes just to be sure!
